Another Hump Day

Well here we are at another Wednesday. This week has gone by fairly quickly so far.

I've lost another .8 pounds so I'm finally getting back down again!

I had my 90 day evaluation at work yesterday and am now an official employee with benefits! YAY!!!

Not really anything to report today either. Sorry my posts have been pretty boring this week. I will try to spruce up my life some :).

I have a baby shower this weekend for my sweet "niece" Zoe Alexis. I can't wait till October 29th to meet her!



OK I asked the other day for you to post your favorite recipe and only a couple of you did. So I'm asking again. Give me recipes people! This girl wants to cook some variety into her life!

I can't wait to see my in law family this weekend! I have missed them! I need time with my niece and nephews before we all start back to school.

I have decided that I am going to start doing 10 sit ups every night until it gets easier then I will bump it up to 20 and so on. I have to do something to build up the stomach muscles that I haven't been using in years. I need to start doing some sort of exercise every night and make it a happen or else I will keep making excuses not to do it. I think I'm the best excuse maker in the world. Any tips or words of encouragement would be greatly appreciated. :)

  1. OK, my tip on exercise: much easier if you can make time to do it in the morning before getting dressed for the day. Too easy to skip it if you're already tired or stressed at the end of the day (even though your brain knows exercise is exactly what you need).

    The great thing about reading your blog is it gives me kick in the butt reminders, like your talking about portion control last week. So thanks!

    Now one of my go-to recipes. It supposedly makes 4 servings at 390 cal. each, but if you make it with whole-wheat pasta instead of white, it is very filling and satisfying, so you could probably add a little more chicken and broccoli and get 6 servings that would be less than 390. Whole-wheat pasta is sort of chewy, but it still has all the protein,vitamins, and minerals that are stripped out to make white flour. So a two-fer: more nutritious and filling.

    Original recipe did not have chicken, but I add it because John likes him some meat! You can use leftover chicken or bake a couple of breasts, or buy it already cooked if don't have time to plan ahead.

    Pasta with Broccoli and Garlic

    8 oz. non-noodly whole-wheat pasta, like shells, elbows, spirals, etc.
    1/4 C. olive oil
    6 cloves of garlic, finely chopped
    1/4 tsp. crushed red pepper
    Salt
    12 oz. broccoli florets, cut in 1/2-in. pieces so they cook faster
    1/2 dry white wine or water with 1 tsp. chicken bouillon dissolved in it
    3/4 lb. cooked chicken cut in strips
    Chopped fresh or dried parsley
    Parmesan cheese, fresh, shredded if you can splurge

    -Cook and drain pasta according to direction on package.
    -Heat oil in med. skillet over med. heat and add garlic, red pepper and salt. Lower heat and cook so garlic softens without browning.
    -Add broccoli and liquid broth. Cover pan to steam broccoli until just fork tender.
    -Toss broccoli/sauce mixture into drained pasta, add parsley. Sprinkle cheese over top of each serving.

    You will have leftovers to nuke another night. Just hold off on the cheese until you're ready to serve.

    My main tip from what I have learned is to PLAN PLAN PLAN! I make a weekly schedule of meals (remember to schedule in leftovers because some things you just can't portion for 2 people!) and go to the grocery store with my meal plan in mind. ALSO if you plan you won't get home from work and thing "what should i have for dinner...." and then eat bad or have to go to subway all the time haha!
