Another Day Another Dollar

OK so I'm still stuck in this plateau but I'm going to do some research on how I can get out of it. I didn't change weight between yesterday and today which is a good thing because it's better than gaining. I am starting to be able to tell a difference in the way my clothes fit which is always exciting!

Eric and I had a good stay in night last night. We watched some TV and then blew up the air mattress in the living room and watched a movie and played with our dogs.

OK here is the Mexican Lasagna recipe that I promised it is delicious and so easy to make!! Just remember one serving is only one cup:

Ingredients

  • 1 pound lean ground beef
  • 1 (1 ounce) package taco seasoning mix
  • 1 (14 ounce) can peeled and diced tomatoes with juice
  • 10 (6 inch) corn tortillas
  • 1 cup prepared salsa
  • 1/2 cup shredded Colby cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium-high heat, brown the ground beef, and stir in the taco seasoning and tomatoes. Line a 9x13-inch baking dish with half the tortillas. Spoon the beef mixture into the dish, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese.
  3. Bake at 350 degrees F (175 degrees C) for 20 to 30 minutes, or until cheese is melted and bubbly.
Well we're halfway through this week. I didn't think yesterday was ever going to end. Oh I also didn't make it to 100 ounces of water yesterday. I have got to do better today. No excuses!
 
I am excited for Saturday to shoot a very sweet friend's wedding. It is going to be beautiful and so much fun! Even if they are Aggies :) Just kidding! Anyway that's all for now. Thanks for reading!

  2. Thanks for the recipe! Will be trying it SOON. Continue to look for other changes you notice besides the scale. Tha scale can be deceiving. Keep it up Sara!!!!!

  3. This is the worst part of losing weight once your body gets used to eating a certain amount of calories and burning a certain amount at the gym. SO in order to start seeing that number go down you have to eat less calories than before or burn more calories than before! Try to determine where you feel like you can easily adjust one of those two things. I know you said you were going to start putting in more cardio and that you were going to join the gym soon and thats personally what I recommend but everyones weight loss journey is different. The daunting fact is you are going to hit several plateaus and the more you lose the harder it is going to be to keep losing DANG.
